I love cooking my vegetables in my instant pot pressure cooker whether by steaming or pressure cooking. They come out perfect all the time and they only require a few minutes to make like this instant pot carrot and instant pot asparagus. Honestly, there is no excuse for not eating enough vegetables or incorporating in your meals if you owned a pressure cooker. I often encourage people who are letting their IP gather dust to start with simpler recipes that only require water and maybe two to three other ingredients. One of the easiest vegetables you can make in your pressure cooker is corn.

Why you should no longer boil corn on the stovetop but the instant pot

It cooks the corn on a cob to precision, fresh or frozen, the corn comes out tender-crunchy, sweet and flavourful. Every bite you take promises a wonderful experience.  

It is quick and I mean super quick and easy. You can cook the ear of corn with or without husk and you can cook as many as the IP pot can contain. Please note that you should never force close or overfill your instant pot.

You don’t have to worry about the water boiling over as you would when you cook corn on the stovetop and you can be assured you are not losing majority of the nutrients in the corn to the water. This makes it fresh tender and crunchy.

It can be made with or without trivet or steamer basket. Although, I prefer to make mine on a trivet or steamer basket. That way the corn steams as opposed to boiling, which is the whole point of using the IP in the first instance. If the need arises and I need to cook it directly in the pot, I stand them vertically (upright) in the pot.

How to make corn on a cob in an instant pot

Check that the corn can fit into your instant pot pressure cooker. Cut the corn into twos if it doesn’t fit to make mini corn cobs. Wash the corn if need be especially if it’s from the supermarket Place your trivet or steamer basket in the instant pot, add 1 cup of water Stack the corn on the trivet, husked or not, lock the IP with its lid and turn the valve to the sealing position Cook the corn on high pressure or manual for 2 minutes, then do a quick release to depressurise the pot. For frozen corn, cook for 3 minutes Carefully take the ears of corn out from the pot using a thong. Brush some melted butter and a sprinkle of salt and black pepper on the cooked corn. Serve and enjoy.

How to season corn on the cob

corn when eaten on its own even without salt tastes delicious and fresh. If you are looking to switch things up then you can season your corn with the following options butter and lime roasted garlic and butter you can even boil the corn in your IP with milk and butter. This is heavenly and it’s a great treat when you are not counting calories.
