Homemade teriyaki sauce with honey recipe

Many bottled teriyaki sauces are filled with preservatives, lots of sugar, not this one. My homemade Teriyaki sauce recipe is so much more than the bottled stuff you’ll find at the supermarket. It’s rich, complex, slightly sweet with a savory note. This condiment should be in your refrigerator at all times, it is super handy. You can cook just about anything, it is versatile, it can be used as a marinade or as stir fry sauce, you can use it with chicken, beef, pork, or vegetables. What’s more, my teriyaki sauce recipe is so super easy to make and ready in minutes! I know this is a simple recipe, but once you try my version of the teriyaki sauce recipe you will never again buy bottled stuff from the shop. It’ll be the best Asian homemade sauce you’ll ever make. Well, apart from my all-purpose stir fry sauce, both sauces are delicious and can be used interchangeably. You can make this sauce with just four ingredients but I like to add a little minced fresh ginger and garlic. To keep this authentic like the Japanese version, you can skip ginger and garlic.

How to make authentic teriyaki sauce with honey

To a small saucepan, combine soy sauce, mirin, rice vinegar, honey, ginger, garlic, and stir to combine. Mirin  Japanese rice vinegar: I used this in place of SAKE, feel free to use it if you have it or substitute it with dry sherry or Chinese rice vinegar. Honey: this can be substituted with sugar like the Japanese version. However, I find that the honey balances the sweetness so well while sugar on the other hand can be too sweet. Fresh ginger and garlic: this is completely optional as authentic Japanese teriyaki sauce does not use them. The addition of garlic and ginger does add some oomph to the sauce Place it on medium-low heat and bring to a boil for 5-10 minutes. If you used sugar instead of honey, make sure to stir it until the sugar dissolves before you let it simmer for another 5-10 minutes. Remove it from the heat and leave it to cool slightly before pouring it into a jar. You can also use the sauce immediately as well. The sauce will thicken as it cools down.

How to use Teriyaki sauce

As mentioned earlier, this simple homemade teriyaki sauce is perfect for everything. It makes a perfect glaze on salmon, shrimp, pork, chicken, vegetables, tofu, tempeh, and more. You can also use it as stir fry sauce, depending on how saucy you want it. I use one part teriyaki sauce, ½  part water, and then thicken with cornstarch. PS: if using as a marinade, do keep an eye as the honey and sugar in the mirin can make the meat or vegetable burn quickly.

How to store 

Store it in the fridge for up to 1 week or longer if you omit garlic and ginger.

What is teriyaki

Teriyaki is a Japanese cooking technique used for grilled food. ‘Teri’ means shine or luster while ‘Yaki’ means grilled or broiled. A Teriyaki sauce is traditionally made by mixing soy sauce, mirin, sweet rice wine, and sugar. It is typically brushed on grilled meats or vegetables.

Is Teriyaki Sauce Healthy

Traditional teriyaki sauce uses lots of sugar. In this recipe, I used honey and made it sugar-free so yes, teriyaki sauce is healthy provided you are not literally drinking the sauce.

What is Mirin

Mirin is a sweet rice wine similar to sake but with lower alcohol content and higher sugar content. It’s used in many Japanese dishes as well as a marinade for sushi or vegetables/meat (teriyaki). It’s available at Japanese grocery stores or online. SAKE is like the opposite of Mirin, with less sugar, high alcohol.
