This is about to be the best chicken skewers recipe you will ever make. No lies here, the flavour in this recipe is insane. We sometimes underestimate some simple pantry staples ingredients like garlic granules, onion powder and the likes that we look for some fancy spices to use on meats or vegetables thinking it would make it tasty. Honestly, we need to start trusting more in these everyday ingredients, they produce some amazing flavours if you can combine them well.  I recently made a Nigerian style vegan stew for a friend and I had to use vegetables in place of beef or chicken (obviously) for the stew. In order to make the vegetables tasty, I marinated them in just salt, garlic, ginger, onion powder and olive oil and then grilled them before adding to the stew. it tasted so good. I honestly couldn’t believe I could make that type of stew taste delicious even though I practice meatless Monday dinners. (I digress, back to the room Ajoke) Because of the above little story, I have since kept my marinade simple, yet delicious. That is what this grilled chicken kabobs recipe promises you. Simple ingredients, huge flavour. right, let’s get to it

What is kabob

Kabob is simply pieces of meat like chicken, beef, lamb or vegetables marinated and then skewered before grilling in an open fire, oven or spilt. You may have also heard Kebab ( UK )or kebob (US), I think they are the same as kebab or shish kebab but pronounced differently depending on the part of the world you are. Kabobs can be made from different types of protein from beef to chicken to lamb and chicken as mentioned above. You can also use seafood like prawns, shrimps or fish like cod or hake.

Grilled chicken kabobs marinade

this recipe uses the best chicken kebab marinade ever. It is super simple and yet delicious. These ingredients are easily sourced and cheap too. To make the best marinade, you will need dried parsley, dried coriander, garlic granules, onion powder, freshly ground black pepper, chicken stock powder, salt, and olive oil. The stock powder is optional but I recommend it for intense flavour in the overall dish. This marinade works for all grilling types, open fire, gas grill, oven and charcoal.

Ingredients you will need

Boneless skinless chicken breast pieces: you may also use chicken thighs Garlic granules Onion powder Oregano Coriander Freshly ground pepper Chicken stock powder: this is optional Olive oil Salt to taste Lemon juice and water Vegetables used Zucchini, this is also known as courgette in the UK Mixed bell peppers, I used orange bell pepper and red bell pepper, they are sweet and tastes better in this recipe than green bell pepper Onions: any type of onion would work here, shallot, red onions or white

How to make grilled chicken kabob with vegetables

Soak the wooden skewers in water for at least 30 minutes, do this before preparing the rest of the ingredients. I use a baking tray for this job, add water to a baking tray and place the wooden skewers in it making sure they are fully submerged in the water. Prep the chicken breast: I love to soak my chicken breasts in some room temperature water and lemon juice before cooking it. Similar to brining chicken without the salt That way I clean and tenderise my chicken at the same time. Place the chicken thighs in a bowl, pour enough water to cover it and add the juice of freshly squeezed lemon and set aside for about 10 minutes. Take the chicken out of the water and pat dry with kitchen towel then cut into bite sizes, about 1 to 1½ inches. Try as much as possible to keep them the same size, that way, they cook evenly Cut the veggies:  wash and cut the vegetables into chunks about 1 ½ inches. Alternatively, let the size of the chicken pieces guide you. Marinade: transfer the chicken breast pieces and vegetables into a big bowl and add, Garlic granules, onion powder, oregano, coriander, freshly ground pepper, chicken stock powder (if using), olive oil and salt to taste. Mix to combine and marinate for at least 30 minutes or overnight (the longer you marinate the better flavour you get). Preheat the grill to medium-high 10 minutes before cooking time Thread the chicken and vegetable in the skewer alternating them as you want and grill in the oven between 7 to 10 minutes on each side or until the chicken is fully cooked and no longer pink. This is total cooking time of 14 to 20 minutes.

What to serve with chicken kebabs?

We love our grilled chicken kabobs with salad and chips then with our favourite dipping green sauce (recipe coming soon) You can also serve it with rice dishes like this simple garlic butter rice or this super quick instant pot coconut rice or vegetable couscous. You can soak wooden skewer from 10 minutes to 30 minutes. I prefer the later and soak for at least 30 minutes before using them. If using metal skewer, you do not need to soak it, make sure it is thoroughly cleaned before threading it with food.

can you put wooden skewers in the oven

yes, they are safe to use in the oven or grill? The essence of soaking it in the first place is to stop it from burning because it is waterlogged.

Is this recipe healthy

Yes, it is low carb and makes a great option for a healthy lunch or dinner. Chicken kebab is also gluten-free and keto friendly too.

how long to cook chicken skewers

cut the chicken and vegetables equally so that they can cook evenly. Depending on how hot your oven or grill is, it takes about 7 minutes to cook one side of the skewer. That is 14 minutes in total, if you are unsure, check the chicken, by tearing the biggest chunk into 2, the inside should be white, no longer pink and opaque.

Can I pan-grill this recipe

Yes, you can, follow the same instruction as above flipping the chicken skewers intermittently until it is fully cooked. You can also use Gorge Foreman grill if you have one. Tub the pan with some oil so the chicken doesn’t stick.

How do I make my chicken kebobs spicy

Add some red pepper flakes or cayenne pepper to the marinade ingredients to your pepper tolerance level.
