There is no need to salt and drain the cucumber for this recipe. The essence of salting cucumber is to remove the water content so that it will not make the salad watery. Cucumber: I recommend English cucumber for this salad, you can choose to peel the skin or leave it on. English cucumber has fewer seeds, and you don’t need to scoop the seed out for this recipe. Red onion: It is crisp, and sweet, and adds a nice contrast to the salad. You can soak the onion in cold water for 10 minutes if you are not a fan of the raw onion taste. Sour cream: I like to use full-fat sour cream, but you can use light sour cream. Substitute sour cream with Greek yogurt and up the sugar to balance the tanginess of the yogurt. Dillweed: It is a must in this salad, it gives the salad a nice flavor. Substitute dried dill for fresh dill and double or triple the quantity used. sugar: It helps to take the edge off the sour cream, vinegar, and onion. Creamy cucumber salad is best served immediately or for a few hours (a maximum of 4 hours). After that, the salad starts to get watery, and the cucumber loses its crunch. If you want to make it ahead, I recommend making the salad dressing and sliced cucumber separately and combining them when you are ready to serve it. This way, your salad will stay fresh, nice, and crunchy.
